Pizza, Calzone, Piadina or Pinsa

Our mozzarella is fresh Fior di Latte from Teano in Campania. Our creamy mozzarella di Bufala is from Mondragone in Campania. Our extra virgin olive oil is from the Molise region in Italy.

Our professional gas & wood burning oven has been hand made by Forni Ceky, the leading Italian manufacturer of hand crafted ovens for pizza baking. For more than three generations the company has been creating its products *entirely by hand*: brick over brick.

Our pizza is a hybrid yeast and sourdough proofed for over 48 hours. This long proofing time with cooking at intense heat of 500° produces a moist, light, soft digestible crust which is aromatic and delicious.

8. Americana – pepperoni, peppers, chicken, red onion & bbq sauce £13.50

9. Burina – tomato base, mozzarella, red onion, Italian bacon & parmesan £13.50

10. Diavola – tomato base, mozzarella, roast chilli & Italian sausage £13.50

You can switch from Fior di Latte Mozzarella to Mozzarella di Bufala. Any of the ingredients listed in the pizza menu or specials boards can be added to the pizza of your choice from £0.60 – £1.50 {specials may vary}.

Pinseria

The Pinsa Romana is a tradition dating back to ancient Roman times, created by peasants who lived in the countryside around Rome. They elaborated dough from water, cereals, salt and herbs and then molded it into a flat, oval bread to be cooked on hot coals and a stone which they then offered to the priests. The cereals were mostly millet, barley, oats and later also spelt.The preparation of this bread, the ancestor of pizza, was explained by the poet Virgil who described a farmer grinding wheat grains, sifting the flour and mixing it with water, salt and aromatic herbs and then cooking the “schiacciata” (flat bread) on hot ashes and a stone. According to the Poet, the pinsa was the first Aeneas’ meal as he disembarked in Lavinio (RM). The term pizza probably comes from pinsa, past participle of the Latin verb “pinsere” (to stretch)
Today’s pinsa is more digestible than its illustrious ancestor, being kamut and Egyptian spelt replaced by strictly non-GMO wheat, soy and rice flours. Furthermore, a new method of leavening increased the success of this delicious digestible quality product. These fine dishes are in several “pinserie” in the Lazio Region Of Italy and now available here on the Isle of Man at Just Pizza & Pasta. There we have it, The Pinsa Romana!
